We pay special attention to our wine-cellar because it is the other essential condition for making exciting unique wines following the grapes that we grow.

In the fundamental of success lies the skill of enhancing your advantages and the thing that makes you different from the others, having own appearance and being explicit for your customers.

The strategic goal of Domain Yustina are wine tourism, which we will develop in our complex, restaurateurs with an attitude toward the wine, corporate customers and connoisseurs, for whom the wine is the accompaniment to a nice dinner with very special people around you.

This is why the team philosophy is that the wine making is an art of offering wines with a refinement and a harmony.

Our cellar is designed by leading experts in the wine branch, but our team played the leading part for developing the idea and its entry in our future plans. We have decided to do microvinification using modern technological means and equipment. In this sense no compromises with the quality have been made at any stage while selecting the equipmen. We have provided means of control of the whole process from the hand picking-up of the grapes, the following assortment, ability for cold maceration, fermentation in small capacities with an excellent control of the process for different grape varieties.

Through the realization of this project, we set before us the ambitious goal to make our cellar a laboratory model for testing and experimenting in real production conditions of new wine-growing equipment and technologies, developed by Tomika-metal SA, a leading company in this field and a partner of ours in this initiative.

Vasil Stoyanov, our Head Technologist, is actively participating in the process of design and construction of each particular fermenter for achieving an optimization of the processes and convenience for their service and hygienization.

And the other way about, our Tomika-metal engineers become our team members during the grape harvest campaigns, studying the process of making wine while the cluster is on the vine, following its way to the fermenting squeezed juice and offering still more effective technical solutions to all branch colleagues.

In our production base could be held thematic seminars and presentations, addressed to our branch colleague expert colleagues, to the good-wine connoisseurs, to the students of the Plovdiv University of Food Technology - the oldest and the only educational institution for enologists in the country. The project provides ability for substitution of already experimented techniques with new ones without disturbance of the technological process.

We have used the two-year period of the complex planning and in a part of the old premises we have created a small model of the future cellar, where we have made our first wines of vintage 2006 and 2007 from the Premiere and Monogram bottled series.

We, in Domain Yustina, realize that the making of a quality wine requires time and the establishment of a name happens slowly with a lot of hard work.  We know that you - our customers will help us in that. We are aware that the customers' trust is hard to earn and very easy to lose. This is why we cannot afford even the thought of making compromises with the quality in any of our activities.
